Milled from our family's single grove of ancient Souri olives in Rameh, in the Galilee mountains — a village whose oil The New York Times profiled in 2021, and where our family has pressed every harvest since 1862.
The November 2025 olives were handpicked early and cold-extracted within two hours at our family's private mill — the short interval that protects polyphenol values — then filtered for stability. Laboratory analysis by Veltia (Cyprus): 1,024 mg/kg total polyphenols — including 164 mg/kg oleocanthal and 133 mg/kg oleacein — more than four times the EFSA polyphenol health-claim threshold. Expect a bright, gold-green oil with notes of wild grasses and dandelion and a peppery finish — the signature of its phenolic content. We drizzle it: salads, labneh, grilled vegetables, good bread. A little goes a long way.
